Chef Victor Franca is returning to the Royal Cork Yacht Club for a night of fine dining on Friday March 10th. Victor’s love for cooking began at a very young age while watching his grandmother prepare food in the family home. Victor hails from Brazil so his cooking has a strong South American influence.
If you’d like to try something different come along on the night to experience a 7 course tasting menu full of delights. Victor and his team will be cooking up a storm in the kitchen while you enjoy a complimentary cocktail in the bar on arrival.
Victors menu for the evening:
Carne de onça: brown bread, beef filled minced pickled onions.
Irish prawns tartare, horseradish, dill, parsnip.
Wood fire grilled celiac, parsnip veloute. Grilled leaves.
Sourdough Bread, feijoada butter.
Turbot/Cod, moqueca, beans, pickled coconut, dendê farofa.
40 days dry aged Ribeye, tomato vinaigrette, grilled veg, chimichurri béarnaise
Coconut, passion fruit tapioca, BBQ pineapple consommé.
